Roasted Pumpkin, Cranberry and Giant Couscous Salad with Bulgogi & Orange Dressing
- 225g Korean Bulgogi
- 225g orange juice
- 1kg roasted pumpkin or butternut squash, 2cm cubes
- 600g cooked giant couscous
- 100g thinly sliced red onion, fried
- 50g baby spinach / mixed salad
- 25g dried cranberries to garnish
- 25g chopped walnuts/pecans* to garnish
*May be omitted.
- In a large container, toss the salad ingredients with Korean Bulgogi paste and orange juice; mix well.
- Garnish and serve
